Sharn Jean and I cooked dinner again last night for the Lodge; tried something new...an veggie salad that we had never fixed before. We made some major modifications, and it turned out to be a big hit. I'm just a so-so salad fan, especially an all veggie one, but this thing was awesome. Here it is, as modified:

Vegetable salad
1 can of LeSueur peas

1 can white shoe peg corn

1 can French style green beans

1 cup chopped celery

1 medium jar pimentos (or more...I like pimentos)

1 cup chopped green onions (or regular onions will work)

1 cup chopped bell peppers
1 cup peeled, chopped cucumbers


Drain all vegetables, mix together.

Dressing


1/2 cup Canola or olive oil

1/2 cup vinegar

1/2 cup sugar


Mix oil, vinegar and sugar and bring to a boil, but do not boil. Pour over vegetables and chill.

We added a dash of Morton's Nature's seasoning which I think was the key. Go easy; add it to taste. Next time I think I would add an extra dash of garlic. Nothing says you couldn't add mushrooms or other favorites!


Should feed about 7 or 8.
