I started playing with this tonight, it worked out okay. I like spicy food, and this ends up pretty warm. It would be good over rice, or with some chicken mixed in. Some of the measurements are very approximate and subject to personal taste.
1 large onion, chopped
3-4 green onions, chopped
3 large carrots, chopped
1 tablespoon or so curry powder
1 teaspoon brown sugar
2 tablespoons minced garlic
1 teaspoon ginger powder
2 serano peppers, sliced
1lb chickpeas/ garbonzo beans
2 large potatoes, cubed
1/2 lb green beans, chopped
1/2 teaspoon salt
Black pepper, until it looks right. Tablespoon or so?
Red pepper flakes, about a tablespoon or two
1 can of diced tomatoes, not drained
2-3 cups of vegetable broth
Dump everything into the crock pot, turn it on high. Come back in about 5 hours, when the veggies are soft it's done. I used dried chickpeas, soaked them overnight and then cooked them for 6 hours on low before making the curry. You could also use two or three cans of chickpeas and just add them straight in without precooking. Depending on your personal taste, you may only want to put in one serano pepper as well. Adding chicken or serving over rice will calm the heat a little bit, as will adding a bit of sour cream. When it's near done, tossing in some chopped kale or spinach adds a nice flavor as well but you don't want to cook that in for the entire process or it gets lost.
