Tired of peanut brittle? Try this. Sharn Jean made some a couple days ago and it is awesome!Cashew Brittle
½ cup white Karo Syrup
1 Cup Sugar
1 and ½ cups of Cashews (preferably salted, if not you may want to add a dash of salt)
1 teaspoon vanilla
1 teaspoon butter
1 teaspoon baking soda
Combine syrup, sugar, salt and butter; pour into electric skillet and cook (at about 350 degrees) until it just begins to turn color. Add Cashews and continue until the mixture turns a light caramel color.
Turn off the heat; stir in the baking soda and vanilla until the mixture is light and foamy. Pour onto a greased or buttered cookie sheet and spread with spatula. Chill or let cool and then break into pieces. Store in an air tight container.
