    farmgirl's Green Chili

Fixed a batch of FG's Green Chili a couple nights ago; it's not just good, it's very good! I did a couple mods for convenience's sake; omitted the bell peppers and used William's Chili seasoning instead of other seasonings. I like to put my onions in first and "brown" them until they turn opaque, I also added about a half cup of chopped celery to the onions. There's something about the green chiles and the Rotel that really gives it something that run-of-the-mill chili doesn't have. It's on the mild side, but that's the beauty of making your own, you can make it as hot or as mild as you like.

Sounds interesting. I can't do hot, on stomach meds, I like the mild recipes.

Then I would buy the "mild" green chiles and omit the Rotel.
