    Wrapped Gazebo and smoked a brisket yesterday......

    Wrapped our gazebo yesterday with tarps to protect screens and also allow a place for more storage during winter months. I bought 8 white tarps 8'x6' to connect together using eyelets. Wouldn't you know it when I went to zip tie them together the eyelets weren't lining from one tarp to the next! Wouldn't you think if you bought 8 identical tarps the eyelets would all be in the same place on each tarp? Nope not these, they must have put the grommets in by hand on each one. That really surprises me, how do they make money? So anyway I had to buy a grommet kit and put in grommets where needed. I'm waiting for some more zip ties, bungees and white gorilla tape to finish it up. Anyway I got it wrapped and had some delicious brisket. Turned out to be a good day even after my ranting to my wife about the grommet holes!!!! Oh yeah I had Ellie keeping me company, another big plus!!

    I just purchased a pit barrel cooker, it works phenomenal. Iím waiting for the side shelf from big poppa smokers to come in. I purchased a barrel dolly which fits perfect and added a heat guage and vents to the top. Iíve done bb backs, pork chops and chickens so far and will do short ribs next. Iíve been smoking for many years and have had many different smokers. I currently have the master built electric which works great too. Will post some pice when I fire it up in a day or too.

    I have a ZG smokepro pellet smoker by campchef.Used 3-2-1-method. 225 on high smoke for 3 hrs,then took off high smoke left at 225 wrapped in foil then 1 hr unwrapped until 195 degrees internal.
