So my wife has made her famous corn casserole for many years now at Thanksgiving and Christmas, (my kids are 28, 26, 23 boy, boy, girl), they all, always remember having it. Yesterday my wife was fixing the food stuff and my daughter asks what she could do to help. Wife says, you can make the corn casserole. Daughter say, that's a good idea, I need to know how to make that, its so good!


  • Wife - it's not hard
    Daughter - ok, where is the recipe
    Wife - it's right there (pointing to corn and stuff on the counter)
    Daughter - ya, ok but where is the recipe
    Wife - right there
    Daughter - no, the recipe, how to make it
    Wife - right there
    Daughter - where!?
    Wife - on that box!
    Daughter - what do you mean "on the box" this box? (as she picks up a small box of Jiffy mix stuff)
    Wife - yes, Erica
    Daughter - you mean, this is the corn casserole recipe you use
    Wife - yes
    Daughter - that you've always used
    Wife - yes
    Daughter - so,... it's not like a old family recipe or anything, its off a box from the grocery store
    Wife - yes
    Daughter - .............................well ok.
    Me - it's probably somebody's old family recipe, if that helps
    Daughter - no, I just thought.... never mind.
And you know what - it was still good again.

Does this help

Corn Casserole
1 can (14-15 oz.) whole kernel corn, drained
1 can (14-15 oz.) cream corn
2 eggs, slightly beaten
1 stick butter or margarine, melted
8 oz. sour cream
1 box Jiffy corn muffin mix
Preheat oven to 350 degrees.
Mix all ingredients together, but don't beat. Pour into 9-by-10-by-4-inch
baking dish or pan sprayed with baking spray. Bake 45 minutes or until
golden brown.
Note: One can double the recipe and uses a 9-by-13-inch pan,
baking it about 90 minutes or until golden and a butter knife inserted in
center comes out clean.
