Since Farmgirl asked me to post the recipe in the Veggie Time thread here goes.....

Fried Squash Puffs (Can substitute zuchini for squash)

3/4 lb yellow squash, about 2 medium, cubed
1 egg, beaten
1/3 cup all-purpose flour
1/3 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
1 medium onion, grated
vegetable oil for frying

Add squash to saucepan and cover with salted water. Cook squah, covered, 10 - 15 minutes or until tender. Drain and mash enough squash to make 1 cup. Combine squash and egg and blend well. Combine flour, cornmeal, backing powder, and salt. Stir well. Add squash mixture and onions, stir until well blended. Drop squash mixture by level tablespoon into hot oil. Cook until golden brown, turning once.
Makes about two dozen

That sounds awesome!!! Going to make these and freeze them when the Fall garden starts coming in!!!

They are awesome smeared with butter and/or honey. BBQ sauce works really good as well. My wife and kids don't think they reheat very well, but personally I like them cold. Make a great snack to grab and go. We have so much yellow squash and zuchini that we just boil up and mash a bunch and measure what we have. The other night we ended up quadrupling the ingredients we had that many. We usually just fry them in a sauce pan, but if one has a deep fryer they can be made pretty quick.

No rush on things. I just did not want it to get lost in the shuffle.
