I live in az. My 2 acres is a mix of grass, weeds, and dirt.

Every time I mow the mower deck get caked full of the clippings and dirt mixture build up. To the point the blades start to rub on it.

I scrape 2-3 five gallons of stuff off the deck each time.

I have tried spraying the deck with pam, fluid film, and teflon dry lube spray to prevent this stuff from sticking. Nothing so far has helped prevent the build up.

What else should I try to prevent it?

You've got tough stuff to deal with. My yard is grass and weeds and I scrape the decks out once a month or more often if I have had to mow wet grass. I don't know of anything to put on the decks that will resist everything from sticking.

I go through the same up to a couple times a month. I don't like doing it but I really don't think there's a way to avoid it unless you are only mowing very dry grass in the middle of the day with no humidity, no dew, no moisture to speak of.

I scrape my deck after each mowing. I get at least one 5-gallon bucket of "stuff".

Based on the following video, I plan on giving Fluid Film a try next time I have the deck off for cleaning.
I know it's not apples-to-apples because Honda uses some type of composite deck material, but it's a pretty impressive result regardless.

Welcome to the mower deck caked-on club. For what it's worth, I have two JD mowers, an X354 and an X584. It seems that the 3-bladed X584 collects more crap under its deck than the 2-bladed X354 mowing the same area. I have tried everything to try to prevent this, but nothing so far works. So I bought a MoJack to raise the mower and now scrape after every mowing. Not fun.

I clean the MMM often thru out the mowing season. It surprises me sometimes how much stuff can build up. Getting rid of that build up is key for keeping my deck in good shape I have no rust issues. I might just wire wheel and wipe with oil when I switch to snow blower and skip painting it this year.

Went all out this time. Bought Por15 to redo my blower. Had more than enough for that job, so decided to do the mow deck as well. I had been using the water cleaning port on the 54 deck. Had used the graphite paint in 2014, which did pretty well, but came off. The water port kept the deck surprisingly clean. So cleaned it up with a wire wheel. Scraped a lot of the paint and rust too. Washed it with the de-greaser then rust converter washing the deck between, then letting it fully dry.
According to The Por15 manufacturer states this works phenomenally well on the underside of decks and can be pounded on with a hammer and stay put. I spent three days cleaning washing treating then painting with three coats of Por15. What a PITA that was, but the surface is slick and slippery. We shall find out how well this really works, but should help to protect the structural integrity of the sheet metal and hopefully prevent rust. Will let it cure for a full week before use, to give it its best advantage. Will let you know!
