Cooked a fresh picnic ham on the grill for 5 hours the other day, and had some very delicious Bar-B-Que sandwiches for a couple days afterwards.
Not really enough left over for 3rd servings, so, I decided to make what was left good enough to feed the wife and I.
Came up with this:
STUFFED BELL PEPPERS WITH BROWN RICE
2 - whole bell peppers, hollowed-out and rinsed, just like you would make regular stuffed bell peppers
1/8th - medium sized onion, finely chopped
1 - cup of brown rice, cooked and tender
2 - slices of baby swiss cheese
1/2 - cup of blended fine chopped Mexican cheese
1 - cup of bar-b-que chopped meat
Cut each slice of swiss cheese in 3 pieces, line the inside of the bell pepper with them
Mix the brown rice, meat, Mexican cheese (leave enough left to top the bell pepper when filled), onion all together
Spoon the mixture into the bell peppers, being careful to compress it firmly against the pepper walls and work your way up
Top it off with the leftover Mexican blend cheese
Spray oil on a baking pan and place peppers on it
Bake in oven @ 325* for 40 - 45 minutes
