Here's how I get to spend my Saturday

Freezing sweet corn, cutting up cantaloupe, and eating tomatoes. Got so much zuchini I'm running out of uses for it.

Zucchini is a good thing to have loads of. I have a recipe, (should be in our GTT cookbook) for Zucchini Bread. It freezes well, but to save freezer space, I grate the zucchini and place 2 cups into the freezer bags, and freeze it that way. When ready to use, defrost on the counter for a couple of hours, then drain off excess liquid. No need to strain or wring, just pour off the major excess, then use as fresh for the bread. Makes for a nice taste of summer during the cold months, when one does not mind having the oven going and making the house warm! :good2:

Already got enough zuchini frozen to make over a dozen loaves of bread. We have peeled it, cubed it up. Then cook till tender. Then mix it up with some flour and a few other ingredients and fry in oil. Basically you get zuchini hush puppies. Can use yellow squash in place of zuchini if needed.

Sounds like a great idea, and I love hushpuppies. When you get a few minutes, would you mind posting ingredients and amounts, so the rest of us can share the goodness? Thanks ever so kindly!! :hi:

I posted the recipe in the cooking/Food forum. Got my internet service back at 5am this morning. Gotta love Charter :nunu:
