I only see it saying how to check the spark plugs, not where they're located? Am In the wrong section?

It’s not real specific. It just says to lift the cargo box to access the area.

Follow the spark plug wires to the other end. Other than that IDK.

Part #6. It’s just a regular Kawasaki coil, one for each cylinder. If I remember correctly it’s gel on with one small bolt, 8 or 10mm I think.

There will be wires that are fastened to the chassis or engine or negative battery post. A weak ground can cause all sorts of issues. Your pictures show a lot of corrosion and dirt. What kind of environment is this operated in?
First thing I would do is change out the spark plugs and see if that clears up your issue. Then move on to the coils. Troubleshooting electrical issues over the internet with someone lacking knowledge of how these systems work can be difficult.

Bought it from a campus. This may sound like a dumb question but how do I remove the spark plugs?

Pull the spark plug wire and use a spark plug socket of the correct size. Torque specs are 18 ft-lbs I think.
Maybe search for a YouTube video if you’re not sure.
