Your "go to" tomato varieties please!

Better Boys and Beefsteak for larger ones. Celebrities are good. I always have to do some Early Girls, because it's nice to have 'something' to eat a bit earlier... and Brandywines are my "must have" for the absolute best tomato sandwiches I've ever tasted. Just something about the taste of a Brandywine.
 
I'm still trying to figure out which ones I like. I like the ones that are red all the way through with no white in the middle. Still not sure which ones that is.
Fully vine-ripened ones... not store bought.

I gave most away to neighbors , family members and coworkers and I had rave reviews about how nice and juicy they were. I was told they were better than what was available in local stores.
Most homegrown ones are better than any you can buy. A YouTuber I watched for a couple years awhile back said it best... "Store bought tomatoes taste like disappointment." (Jess from Roots and Refuge)
 
I grow my own tomatoes and always pick them vine ripe unless someone wants green tomatoes. There are some that still have white in the center of the tomato, them I don't like.
Ahhh. Gotcha. Not sure, haven't really encountered that, unless you mean near the very top 1" or so of the tomato. I know quite a few of the big slicer types will have the center stalk/core part unpleasantly more white and firm, especially closer to the stem. It just ripens last, and I'm not sure what you can really do about that except not eat that part. Same as the top center part of a strawberry. If you let them stay on the vine til that part is soft the rest would be mush. :D I guess I never thought too much about it since I've always just cored that part out. :) They even make several tools specifically for this, but I usually just use the knife I'm about to slice it with.

Not putting all my eggs in one basket.
Got 6 plants of each started. I will only need about half those and my sister in law will likely want what's left.

Yeah, I learned to mix it up with tomatoes a long time ago. Sometimes I end up with way too much, sometimes almost everything is a bit of a flop... but I always get 'something' edible somewhere along the way. I usually plant a couple cherry/grape styles too. Just for snacking.
